Oyster Mushroom and fresh organic green beans harm salad with Grilled halibut by Chef Honoré Gbedze

Warm Green Bean Salad with Grilled Halibut and Oyster Mushrooms

By Chef Honore Gbedze  : Preparation time : 15 minutes ; Cooking time: 15 minutes

INGREDIENTS

4 x 6 oz fresh cut halibut filets

4 bunches of Fresh Oyster mushroom

2 cups of green beans (trimmed and cut into short lengths)

1 medium white onion

1 tea spoon of chopped garlic

1 tea spoon of chopped ginger

1 large fresh tomato

3 table spoons of olive oil

1 tea spoon of fresh chopped herbs – thyme and rosemary

Coarsely ground salt and pepper to taste

METHOD

Blanch the green beans in hot water. Sauté the mushrooms with the olive oil, add the ginger and garlic. Julienne the onion and tomato and add it to the mushrooms. Season the mushroom mixture with fresh herbs, salt and pepper.

Pan grill the halibut fillets quickly on each side and finish cooking it in a 350˚F oven for 10 minutes.

Verify the seasoning and serve.
