INGREDIENTS

Medium fresh size Turkey Breast

2 big carrots

2 big Onions

5 cloves of garlic

4 stalks of celery

1 medium apple

Half cup of dried cranberries

Fresh rosemary and thyme

Coarse salt and fresh peppercorn

2 cups of white wine.

Marinade:

Prepare a quick farce of fresh apple and cranberry chop onion, garlic and the fresh herb shop.

Stuff your turkey breast and rolled it and tied with kitchen rope.

Marinade the turkey in big bowl with 2 cup of white wine, the rest of the fresh rosemary, thyme, sliced onion, carrots and let rest in fridge for about 5 hours.

Method: Dry the turkey. Quickly pan sear all sides and flambé with a little brandy. Prepare the roasting pan by laying the carrot, onion, celery stick on the bottom of the pan and put the seared turkey breast on top of the vegetables and pour the white wine over the turkey.

Roast for about 1 hour 30min in a 350 degree oven. Make sure you occasionally baste the turkey with the jus from the pan.

Verify the taste and season with salt and pepper if needed.

Ready to serve – Bon Appétit!
