Three Organic Leaf Panache with Bacon wrapped Chicken Breast and Fresh Herb Dressing.

2 chicken breasts, skinned and boneless
1 large tomato
1 small red onion
2 tsp of prepared French mustard
2 tablespoons of olive oil
6 bacon strips
1 large organic butter lettuce
1 bunch organic fresh spinach leaves
1 bunch organic fresh basil leaves

Ingredients Vinaigrette:
fresh chopped oregano
fresh chopped garlic
4 table spoons olive oil
4 table spoons of white balsamic vinegar
salt & pepper to taste
Blend all ingredients together

Method
Mix the French mustard and olive oil together and marinate the chicken breast in mustard and oil mixture for 5 hours. Roll each breast with 3 strips of bacon.

In fry pan sear the rolled chicken breast on both sides for 5 minutes finish the cooking in a 350F degree oven for about 25 minutes until become very golden brown. Let it rest for about 5minutes before handling.

Mix all the organic leaves together and add the fresh herb vinaigrette.

Slice the red onion and tomato in rounds and arrange on a serving plate add the lettuce leaves and bacon wrapped chicken to the plate.
