Sable Fish steam Rice by Chef Honoré Gbedze

Fresh Steamed Sable Fish Fillets – African Grandma Style

Preparation 15 minutes

Cooking Time 15 minutes

Ingredients

4 x 6 oz fresh Sable fish fillets

4 medium shallots

4 large red tomatoes

2 long slim cayenne peppers

2 medium eggplants

1 tea spoon chopped fresh garlic

1 tea spoon chopped fresh ginger

4 table spoons of olive oil

4 large green leaves of lettuce

1 table spoon finely chopped cilantro

Coarsely ground salt and pepper to taste

Method

Season the fish with salt and pepper. Spread the ginger and few drops of olive on top of the fish, wrap the fish inside the lettuce leaves.

Cut the eggplant, tomatoes, shallots, into medium cubes, place in double boiler pot and bring to boil, add the garlic, and thinly sliced cayenne pepper.

Place the fish into steamer/strainer and place on top of boiling vegetable ragout, cover until cooked.

After all vegetables are cooked, strain and mash the vegetable mixture, add olive oil, cilantro and verify the seasoning.

This dish can be served with steam rice, boiled potatoes or plantain.
